Restaurant Amusé is the product of husband and wife team, Carolynne and Hadleigh Troy.
Before Restaurant Amusé…
After completing his apprenticeship Hadleigh went on to work at The Loose Box and Jackson’s Restaurant. The couple then moved to Melbourne where Hadleigh worked at Langton’s Restaurant and together they went on to help open the The Brasserie by Philippe Mouchel under legendary Bocuse chef Philippe Mouchel.
Heading to London Hadleigh stepped into the role of Sous Chef at the iconic Michelin starred restaurant, The Greenhouse in Mayfair. Whilst at The Greenhouse Hadleigh was flown to Singapore to cook at the World Gourmet Summit and spent a fortnight based at the Grand Hyatt cooking alongside some of the world’s most acclaimed chefs.
Hadleigh moved on from this role to open La Noisette in Knightsbridge under Ducasse trained chef Bjorn Van der Horst on behalf of Gordon Ramsay Holdings. The restaurant received a Michelin Star within four months. Whilst based in London Carolynne worked at The Berkeley Square in Mayfair and then moved onto the role of Kitchen Administrator at the five star hotel The Landmark London.
The couple then returned home to Perth and opened the restaurant in August 2007.
Since Restaurant Amusé opened…
In February 2008 the restaurant was awarded 'Best New Restaurant' by the Restaurant and Catering Industry Association.
In August 2008 Hadleigh was nominated for 'Best New Talent' by Australian Gourmet Traveller and the restaurant achieved one star status in the Australian Gourmet Traveller Restaurant Guide.
In 2009, three months before their second birthday, the restaurant was awarded Best Fine Dining Restaurant and Outstanding Restaurant of the Year by the Restaurant and Catering Association whilst Hadleigh was honoured with the title of Best Chef.
In August 2009 the restaurant was rated Two Stars by Australian Gourmet Traveller, the only West Australian Restaurant to achieve two star status. The guide listed Restaurant Amusé as the number one restaurant in Western Australia and number forty five in Australia.
The Weekend Australian also named the restaurant in Australia’s top fifty.
The 2010 Top 50 Restaurant Guide awarded the restaurant two hats and also rated the restaurant number one in Western Australia.
Carolynne’s wine list was also awarded a coveted three glass rating by Gourmet Traveller Wine in the national wine list of the year awards.
